What is everyone's favorite way to grill a steak? Seasonings, marinades, etc?

Personally I just put a little seasoning salt and pepper on it, while I'm waiting on the grill to warm it up.

A good steak needs little more than "Dalmatian Seasoning" (salt and pepper), although I like a little garlic also. Grill over a very hot fire to "black and blue", certainly no more than medium rare. If the steaks are on the lean side (and a really nice steak should not be) a dab of butter *Immediately* after being taken off the grill is nice, and provides a vehicle for the garlic.

This leads to the question of what is your favorite steak? I'm a fan of ribeyes and sirloins, although Porterhouse and T-bones run a very close second.

Rib Eye, NY Strips, and T-bone are my favorites for grilling. I'm generally not a large sirloin fan because they tend to be tougher. Could probably be fixed with tenderizing, but I'm lazy. Minute and round steaks, I save for the crock pot and mushroom soup.

I agree a good steak doesn't need much, but some Lawrys or Tones Seasoning salt makes everything better.

Good Sirloin should not be tough. Unfortunately it is hard to find good beef these days. Part of that is the move towards leaner as being desirable. Not to mention most beef at regular stores is not aged anymore, it is just flash frozen after butchering. To get good aged beef costs more than most people are willing to pay for.

However if I do have a reasonable piece of Sirloin, I sometimes like to teriyaki marinade it before grilling. I never like to cook my steak more than medium rare. That and a slow baked potato with sour cream and chives plus a nice vege. makes a great dinner. Very Happy

You're making me hungry, and I just finished a nice ribeye with fried potato and onion. Smile

You're right about finding good beef. We've mostly been buying beef halves from a local rancher and so have a little more control over how it's handled. One of these days I want to try raising my own. A whole steer is a lot for two people, so I'd try and sell half and that would also cut the price a little.

I have no trouble getting good beef, but we do raise our own. We did have a butcher screw up once and ruin a whole beef. We think it got left out to long before going into the cooler. Had to survive on store bought most of that year. One local grocery chain does get decent meat though.
